Ingredients

  • 1 medium head cauliflower, cut into small florets
  • 2 tablespoons olive oil
  • 1/2 cup barbecue sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small corn or flour tortillas
  • 1/2 cup shredded cabbage
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the cauliflower florets with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 15 minutes.
  4. Remove the cauliflower from the oven and toss with barbecue sauce.
  5. Return to the oven and roast for another 10 to 15 minutes, until tender and slightly caramelized.
  6. Warm the tortillas according to package directions.
  7. Fill each tortilla with the BBQ cauliflower.
  8. Top with shredded cabbage and cilantro.
