- 1 medium head cauliflower, cut into small florets
- 2 tablespoons olive oil
- 1/2 cup barbecue sauce
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small corn or flour tortillas
- 1/2 cup shredded cabbage
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Toss the cauliflower florets with olive oil, salt, and pepper on a baking sheet.
- Roast for 15 minutes.
- Remove the cauliflower from the oven and toss with barbecue sauce.
- Return to the oven and roast for another 10 to 15 minutes, until tender and slightly caramelized.
- Warm the tortillas according to package directions.
- Fill each tortilla with the BBQ cauliflower.
- Top with shredded cabbage and cilantro.
- Serve immediately with lime wedges.
Notes
- You can substitute your favorite store-bought barbecue sauce.
- For extra heat, add a pinch of cayenne pepper with the seasoning.
