Ingredients

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1/2 cup barbecue sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 12 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup chopped cilantro
  • 1/4 cup lime juice

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the cauliflower florets with olive oil, chili powder, cumin, and salt on a baking sheet.
  3. Roast for 15 minutes.
  4. Remove the cauliflower from the oven and toss with the barbecue sauce.
  5. Return to the oven and roast for another 10 to 15 minutes, until tender and slightly caramelized.
  6. Warm the corn tortillas according to package directions.
  7. Assemble the tacos: place a portion of the BBQ cauliflower in each tortilla.
  8. Top with shredded cabbage, cilantro, and a squeeze of lime juice.
