Ingredients

  • 1 pound ground turkey
  • 1 medium zucchini, grated and squeezed dry
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
  2. In a large bowl, combine the ground turkey, squeezed zucchini, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper.
  3. Mix the ingredients gently with your hands until just combined. Do not overmix.
  4. Roll the mixture into small balls, about 1 to 1.5 inches in diameter. Place them on the prepared baking sheet.
  5. Bake for 18 to 22 minutes, or until the meatballs are cooked through and browned.

Notes

  • Squeeze as much liquid as possible from the grated zucchini to prevent the meatballs from being too wet.
