Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup diced onions
- 1 egg
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 2 tbsp chopped cilantro
Instructions
- Preheat oven to 375°F.
- In a bowl, mix ground beef, breadcrumbs, onions, egg, garlic powder, cumin, salt, and pepper.
- Shape into 1-inch meatballs and place on a baking sheet.
- Bake for 15 minutes.
- Pour enchilada sauce over meatballs and sprinkle with cheese.
- Bake for another 10 minutes until cheese melts.
- Garnish with cilantro before serving.
Notes
- Use lean ground beef for less grease.
- For extra spice, add chopped jalapeños.
- Serve with rice or tortillas.
