A simple recipe for a baked grilled cheese sandwich using barbecue chicken and dairy-free cheese substitutes.


Ingredients

  • 4 slices bread
  • 1 cup cooked shredded chicken
  • 1/2 cup dairy-free barbecue sauce
  • 4 slices dairy-free cheese
  • 2 tablespoons vegan butter or oil for brushing

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a bowl, mix the shredded chicken with the barbecue sauce until the chicken is fully coated.
  3. Spread a thin layer of vegan butter or oil on one side of each slice of bread.
  4. Place two slices of bread, butter-side down, on a baking sheet.
  5. Layer two slices of dairy-free cheese on each piece of bread.
  6. Top the cheese with half of the BBQ chicken mixture on each sandwich base.
  7. Place the remaining two slices of bread on top, butter-side up.
  8. Bake for 10 to 12 minutes, flipping halfway through, until the bread is golden brown and the cheese is melted.
  9. Slice in half and serve immediately.
