- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can whole kernel corn, drained
- 1 large tomato, chopped
- 1/2 red onion, finely diced
- 1/4 cup chopped fresh cilantro
- 1 jalapeño pepper, seeded and minced (optional)
- 1 avocado, diced
- 1/4 cup olive oil
- 2 tablespoons fresh lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the black beans, corn, tomato, red onion, cilantro, and jalapeño (if using).
- Gently fold in the diced avocado.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salsa mixture and stir gently to combine.
- Serve immediately or chill for at least 30 minutes to allow the flavors to meld.
Notes
- For a spicier salsa, leave in some of the jalapeño seeds.
- You can add other ingredients like bell peppers, cumin, or chili powder for variations.
- This salsa is best served fresh.
