- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/4 cup olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons Jamaican curry powder
- 1 teaspoon dried thyme
- 1/2 teaspoon allspice
- 1/4 teaspoon cayenne pepper (optional)
- 2 cups chicken broth
- 1 potato, peeled and cubed
- 1 carrot, peeled and sliced
- 1 scotch bonnet pepper (optional, for heat)
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic and grated ginger; cook for 1 minute until fragrant.
- Add chicken pieces to the pot and brown on all sides.
- Sprinkle in curry powder, thyme, allspice, and cayenne pepper (if using). Stir to coat the chicken.
- Pour in chicken broth, scraping the bottom of the pot to loosen any browned bits.
- Add cubed potato and sliced carrot to the pot. If using, add the whole scotch bonnet pepper (do not break it open).
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.
- Season with salt and black pepper to taste. Remove the scotch bonnet pepper before serving.
- Serve hot with rice or other desired sides.
Notes
- For a thicker sauce, mash some of the cooked potato against the side of the pot.
- Adjust the amount of cayenne pepper or scotch bonnet pepper to control the level of heat.
- You can substitute chicken breasts for thighs, but adjust the cooking time accordingly.
