A refreshing and flavorful Asian-inspired noodle salad with a sesame dressing.


Ingredients

  • 8 ounces linguine or angel hair pasta
  • 1/2 cup sesame oil
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/2 cucumber, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons sesame seeds, toasted

Instructions

  1. Cook the pasta according to package directions. Drain and rinse with cold water.
  2. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey or maple syrup, ginger, and garlic.
  3. In a large bowl, combine the cooked pasta, red bell pepper, carrot, cucumber, and cilantro.
  4. Pour the dressing over the pasta mixture and toss to coat evenly.
  5. Sprinkle with toasted sesame seeds before serving.

Notes

  • You can add cooked chicken, shrimp, or tofu for added protein.
  • Adjust the amount of dressing to your preference.
