Description
A refreshing and flavorful Asian-inspired noodle salad with a sesame dressing.
Ingredients

- 8 ounces linguine or angel hair pasta
- 1/2 cup sesame oil
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1/2 cucumber, thinly sliced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons sesame seeds, toasted
Instructions
- Cook the pasta according to package directions. Drain and rinse with cold water.
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey or maple syrup, ginger, and garlic.
- In a large bowl, combine the cooked pasta, red bell pepper, carrot, cucumber, and cilantro.
- Pour the dressing over the pasta mixture and toss to coat evenly.
- Sprinkle with toasted sesame seeds before serving.
Notes
- You can add cooked chicken, shrimp, or tofu for added protein.
- Adjust the amount of dressing to your preference.
- This salad is best served chilled.
