Description

A delightful fusion of classic apple pie and creamy cheesecake.


Ingredients

  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 and 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 4 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 4 cups thinly sliced peeled apples (about 4 medium)
  • 1/2 cup packed light brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, cut into small pieces

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press mixture onto the bottom of a 9-inch springform pan. Bake for 10 minutes. Let cool.
  3. In a large bowl, beat cream cheese and 1 and 1/2 cups granulated sugar until smooth.
  4. Beat in 1/4 cup flour, cinnamon, nutmeg, and cloves.
  5. Beat in eggs one at a time, mixing just until combined.
  6. Stir in sour cream and vanilla extract.
  7. Pour half of the cream cheese mixture over the crust.
  8. In a medium bowl, combine sliced apples, brown sugar, and 1/4 cup flour.
  9. Spoon apple mixture over the cream cheese layer.
  10. Pour remaining cream cheese mixture over the apples.
  11. In a small bowl, combine remaining 1/4 cup flour and cut-in butter until crumbly. Sprinkle over the top of the cheesecake.
  12. Bake for 60-75 minutes, or until the center is set.
  13. Turn off oven and let cheesecake cool in the oven with the door ajar for 1 hour.
  14. Remove from oven and cool completely on a wire rack.
  15. Refrigerate for at least 4 hours before serving.

Notes

  • For best results, use room temperature cream cheese and eggs.
  • Do not overmix the batter once the eggs are added.
  • Cooling the cheesecake gradually helps prevent cracks.
