Ingredients

  • 1 cup rolled oats
  • 2 cups water or milk
  • 1 large apple, diced
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons all-purpose flour
  • 2 tablespoons rolled oats (for topping)
  • 1 tablespoon cold butter, cut into small pieces
  • Pinch of salt

Instructions

  1. Combine 1 cup oats and water or milk in a saucepan. Bring to a simmer over medium heat, stirring occasionally until cooked, about 5 to 7 minutes.
  2. While the oats cook, prepare the apples: In a separate small pan, combine the diced apple, brown sugar, cinnamon, and nutmeg. Cook over medium heat until the apples soften slightly, about 5 minutes. Remove from heat.
  3. Prepare the crumble topping: In a small bowl, mix the flour, 2 tablespoons of oats, and cold butter using your fingers until the mixture resembles coarse crumbs.
  4. To serve, divide the cooked oatmeal into bowls. Top each serving with the spiced apples. Sprinkle the crumble topping over the apples.
  5. If desired, you can lightly toast the crumble topping in a dry pan for 2 minutes before sprinkling, or serve as is.

Notes

  • Use any milk alternative you prefer for the oats.
