- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped apples
- 1/4 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1/4 cup cold unsalted butter, cut into small pieces
Instructions
- Preheat oven to 350°F (175°C).
- In a small bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and 6 tablespoons melted butter. Press mixture into the bottom of a 9-inch springform pan.
- Bake for 8-10 minutes. Remove from oven and let cool.
- In a large bowl, beat cream cheese and 1 cup granulated sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract.
- Pour cream cheese mixture over the graham cracker crust.
- In a separate bowl, combine chopped apples, flour, brown sugar, and 1/4 cup cold butter. Mix until crumbly.
- Sprinkle apple crisp mixture evenly over the cheesecake batter.
- Bake for 50-60 minutes, or until the center is almost set.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove from oven and let cool completely on a wire rack.
- Chill for at least 4 hours before serving.
Notes
- For a smoother filling, ensure your cream cheese and eggs are at room temperature.
- You can add a pinch of cinnamon to the apple crisp topping for extra flavor.
