- 2 tablespoons olive oil
- 1 pound ground turkey
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 cup cooked rotisserie chicken, shredded
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
- 1/2 cup heavy cream
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain off any excess fat.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer.
- Add cannellini beans, shredded chicken, thyme, and rosemary. Season with salt and pepper.
- Reduce heat and simmer for at least 20 minutes, or until vegetables are tender and flavors have melded.
- Stir in heavy cream and heat through, but do not boil.
- Serve hot, garnished with fresh parsley.
Notes
- For a vegetarian option, omit the turkey and chicken and use vegetable broth. Add more beans or hearty vegetables like potatoes or kale.
- Adjust seasoning to your preference.
- This soup can be made ahead and reheats well.
