- 2 cups chicken broth
- 1 tablespoon butter
- 1/2 cup diced onion
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1 cup cooked shredded chicken
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup heavy cream
Instructions
- Cook the rice according to package directions using chicken broth.
- While the rice cooks, melt butter in a skillet over medium heat.
- Add onion, carrots, and celery to the skillet. Cook until tender, about 5-7 minutes.
- Stir in the shredded chicken, salt, and pepper. Cook for another 2 minutes.
- Remove skillet from heat and stir in the heavy cream.
- Fluff the cooked rice and serve it in bowls.
- Top the rice with the chicken and vegetable mixture.
Notes
- For a vegetarian option, use vegetable broth and omit the chicken, adding more vegetables or beans.
- You can add other root vegetables like parsnips or potatoes.
- Garnish with fresh parsley if desired.
