  • 1 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 cup sliced kiwi

Instructions

  1. Preheat your air fryer to 300°F (150°C). Line your air fryer basket with parchment paper, ensuring it has holes for air circulation.
  2. In a clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form.
  3. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until the meringue is stiff and glossy.
  4. Gently fold in the cornstarch, white vinegar, and 1/2 teaspoon vanilla extract.
  5. Spoon the meringue onto the prepared parchment paper in the air fryer basket, shaping it into a nest.
  6. Air fry for 45-55 minutes, or until the pavlova is crisp on the outside and dry to the touch. Turn off the air fryer and let the pavlova cool completely inside with the door ajar.
  7. In a separate bowl, whip the heavy cream with the powdered sugar and 1 teaspoon vanilla extract until soft peaks form.
  8. Carefully transfer the cooled pavlova to a serving platter.
  9. Top the pavlova with the whipped cream, fresh berries, and sliced kiwi.
