  • Vegetable oil for frying
  • For the Dipping Sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon pickle juice
  • 1/4 teaspoon hot sauce (optional)

Instructions

  1. Prepare the dipping sauce: In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, pickle juice, and hot sauce (if using). Cover and refrigerate.
  2. Set up your dredging station: In one shallow dish, combine flour, paprika, garlic powder, and cayenne pepper. In another shallow dish, whisk the eggs with water. In a third shallow dish, place the panko breadcrumbs.
  3. Coat the pickles: Dredge each pickle slice in the flour mixture, shaking off any excess. Dip into the egg mixture, letting any excess drip off. Finally, coat thoroughly with panko breadcrumbs, pressing gently to adhere.
  4. Heat the oil: Pour vegetable oil into a heavy-bottomed pot or deep fryer to a depth of about 2-3 inches. Heat the oil to 375°F (190°C).
  5. Fry the pickles: Carefully add the coated pickle slices to the hot oil in batches, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown and crispy.
  6. Drain and serve: Remove the fried pickles with a slotted spoon and place them on a wire rack set over a baking sheet to drain any excess oil. Serve immediately with the prepared dipping sauce.
