- 2 cups cooked black beans (or 1 can, drained)
- 1 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 green bell pepper, diced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 bay leaf
- 1 tbsp white vinegar
- 1 cup vegetable broth
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Sauté onion, garlic, and bell pepper for 3 minutes.
- Add cumin, oregano, and bay leaf. Stir for 30 seconds.
- Pour in black beans, vinegar, and vegetable broth.
- Simmer uncovered for 15 minutes, stirring occasionally.
- Remove bay leaf. Mash some beans to thicken the mixture.
- Season with salt and pepper. Serve hot.
Notes
- For creamier beans, mash half before serving.
- Adjust broth for thicker or thinner consistency.
- Garnish with fresh cilantro if desired.
