Ingredients

- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 cup cooked turkey or chicken, shredded
- 1/2 cup cooked rice or noodles
- 1/4 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Pour in vegetable broth. Bring to a simmer.
- Add shredded turkey or chicken, rice or noodles, and thyme.
- Cook for 10-15 minutes, or until heated through and flavors meld.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- You can use leftover Thanksgiving or Christmas turkey.
- Add other vegetables like peas or corn if desired.
- For a creamier soup, stir in a splash of heavy cream or milk at the end.
